CHEESY POTATO BAKE
So let's make these beautiful Easy Cheesy Potato Bake.
INGREDIENTS:
- 2 large russet potatoes
- 1 cup finely chopped onion
- 2 cups finely chopped spinach
- 1 cup greek yogurt (Substitute: Plain Full-fat yogurt)
- 1 cup shredded cheese ( I used sharp cheddar)
- 1 teaspoon garlic powder (Optional)
- Salt and Black pepper to taste
- 1 tablespoon butter (optional)
- 2 cloves of garlic finely chopped
METHOD:
- Spray or brush potatoes with cooking oil and oven bake them at 425F for 45-60 minutes until it gets properly cooked.Turn them half-way for even baking. You can lay them directly on the oven rack or on a baking sheet lined with aluminum foil. For proper baking prick the potatoes with a fork in few places. This will allow the steam to escape from a baking potato.
- While the potatoes bake, make the filling. In a pan heat some cooking oil and add garlic and onion, Once the onions are golden brown add finely chopped spinach. Let it cook for 2 - 3 minutes. Do not overcook else spinach will lose its green color. Add salt. Now set it aside and let it cool.
- Once the potatoes are baked, scoop out the flesh to make room for fillings.
- In a large bowl add the vegetables, add the potato flesh, add 1/2cup cheese ( remaining will be used later), greek yogurt, butter, garlic powder. At this point add more salt and pepper as per your taste.
- Now fill the potatoes with the filling and top it with cheese as much as you want ;-)
- Bake the potatoes again at the same temperature for 15-20 minutes more until the cheese melt.
- Serve them immediately.
