BUTTERY COOKIES
With so much craziness going in life this blog keeps me motivated and focussed on things I love and want to do and when it comes to baking cookies are my favourite bet as they are easy and super quick.
Last night I was feeling very lazy and thought of not making them. Then I thought nooo it is Independence day and I have to make something. It might sound corny but honestly even after staying for almost 7 years in The US, my heart still crave for where my roots belong.
These Buttery cookies just need 3 ingredients, and I am pretty sure that whosoever will have it will get hooked.
Let's get rolling:
INGREDIENTS:
- 2 cups flour ( I have used wheat flour)
- 1/2 cup powdered sugar
- 1 cup salted butter
- Tutti fruity in green and orange colour (Optional)
- 4 drops pineapple essence (optional)
METHOD:
- Preheat the oven at 350 F ( 175 C)
- Line the baking sheet with parchment paper
- In a large bowl add butter and powdered sugar. Using a hand blender blend until creamy.
- Now sieve the flour and add essence if using. Mix together to form a dough.
- If it is too soft and not manageable place it in the refrigerator for 1/2 an hour. I always keep it to firm up the dough as it is too hot here..
- Now using a rolling pin roll the dough about 1/4 inch thick. Make sure you powder the surface with powdered sugar to prevent sticking.
- Using cookie cutter,cut down into desired shapes and press tutti fruity on the cookies. This is totally optional.
- Place them on the baking sheet and bake for 12 to 15 minutes. Keep the baking sheet on the second rack from the bottom.Keep an eye for the last 3 minutes to prevent burning:-)
- Let the cookies cool down on the cookie rack
- Enjoy with a cup of coffee or tea or even as a light dessert.
